CDR CoffeeLab

The CDR CoffeeLab is the system for analysing coffee from fruit to cup by allowing control of the fermentation process. It facilitates process control for producers, green coffee traders and roasters.

The main parameters that can be controlled are the organic acids and sugars in all phases from the fruit to the roasted coffee up to the cup, and also the alcohol that is generated in the fermentation tanks. Obtaining data to allow the characterization and improvement of the product through new production control methods.

Plantation

In the plantation, through the analytical control of fermentations it will be possible to control, differentiate and increase the quality with the definition of objective parameters, during the process of transformation of the fruit into dried green coffee.

Roasted Coffee

By defining a chemical profile of roasted coffee and Espresso through the quantification of parameters, such as organic acids and sugars, the CoffeeLab can objectify organoleptic characteristics with the goal of complementing sensory analyses with instrumental ones, providing data that complements human and technological components.
