Quality Control

The CDR DrinkLab was developed to meet the analytical needs of producers catering for the increasingly popularity of plant-based drinks, such as those based on soy, oat, almond, rice, other cereals and nuts,

Chemical Analysis

The CDR DrinkLab provides chemical analysis of any plant-based beverage quickly and easily either in the laboratory or directly in the production facility.

It can be used to evaluate recipes, monitor production processes and ensure consistency and quality in the final product.

The CDR DrinkLab offers a practical and efficient solution to analyze key parameters at every stage, supporting producers in maintaining high standards from the formulation of the recipe to the shelf.

Parameters – acetic acid, total lactic acid (D+L), starch, ammonia, sugars

Plant-Based Drink Tests

Acetic Acid
Acetic acid can form in plant-based beverages due to microbial contamination, in particular by acetic acid bacteria that transform ethanol into acetic acid in the presence of oxygen. Its presence is not desired and represents a possible indicator of product alteration. Measuring its content is important to evaluate microbiological quality, prevent sensory changes (acidic taste or pungent odor) and ensure a stable and safe shelf-life.

Total Lactic Acid (D+L)
Lactic acid in plant-based beverages can originate from the fermentation of sugars by lactic acid bacteria in fermented products. In non-fermented beverages, its presence may indicate microbiological contamination or product alteration. In some cases it can also be added as an acidifier. Quantifying lactic acid is important to monitor microbiological quality, evaluate the progress of fermentation, ensure product safety and control its sensory and conservation characteristics.

Starch
Starch is a fundamental component of cereal-based beverages, as it represents the main source of complex carbohydrates. During processing, it is partially transformed into simple sugars through enzymatic hydrolysis, contributing to the natural sweetness of the product. Its quantification is important to control the effectiveness of the process, ensure correct consistency, prevent physical stability problems and provide useful information for nutritional assessment and labeling.

Ammonia
In plant-based beverages, ammonia can derive from amino acid deamination processes, linked to protein degradation by endogenous enzymes or contaminating microorganisms. This can occur during extraction, enzymatic hydrolysis or during non-optimal storage. The CDR DrinkLab allows the determination of ammonia content in a simple and fast way to monitor protein alterations, evaluate the hygienic-sanitary quality of the product and control microbiological stability along the entire production chain.

Sugars
In plant-based milk, sugars such as glucose, fructose, maltose, maltotriose and sucrose are important components from both a nutritional and technological point of view. Their presence mainly derives from the transformation of starches during the processing of raw materials. Accurately measuring these sugars is essential to evaluate the caloric content, the glycemic index and to ensure correct nutritional labelling, for example for declarations such as “no added sugars” or “low sugar”. From a food safety and quality point of view, monitoring sugar levels is important to avoid unwanted phenomena such as spontaneous fermentations during storage, thus contributing to the microbiological stability and shelf-life of the product.

Features

Innovative Technology

The use of innovative photometric technology means the reading cell guarantees high sensitivity, a very wide measuring range and excellent repeatability of the analysis results thanks to innovative LED light sources with fixed wavelengths (ultraviolet – visible spectrum, power up to 6 O.D.).

Online Help

The system is easy and intuitive, everyone can use it. Analyses are carried out in just a few steps. In addition, it has a help function that guides you step by step through the test procedures.

Multitasking Mode

The multitasking mode reduces analysis time by making it possible to perform several analyses of the same sample simultaneously, or different determinations of the same parameter on a batch of different samples. During an analysis session you can start another one and put the first one in the background. You can return to background analysis with one click.

Internal Memory

The analyser is equipped with an internal memory capable of storing thousands of analysis results that can be viewed on the display or exported via the USB or Ethernet port.

Barcode/QR Code Reader

The analyser connects with barcode or QR code readers. The sample code is automatically displayed on the analyser. It is possible to associate all the analyses performed on that sample.

PC/Intranet Connection

You can share analysis results by connecting the analyser to your intranet via the Ethernet port or export them by connecting the analyser via the USB port to a host computer.

Maintenance/Service Free

No calibration is necessary because the instrument is supplied pre-calibrated. The analysers use LED light sources and therefore no periodic maintenance is required.
